Today’s main meal.
Zucchini/Cucumber pasta:
1 medium zucchini, 1 medium cucumber, 2 cups of spinach, 1 1/2 tomatoes, 1/4 avocado, handful of basil and parsley, squeeze of lemon juice.
Ginger and Lemon tea:
2 tablespoons fresh crushed ginger and 1/2 lemon.
Gimme more salad.
Quinoa Pumpkin Pancakes
Served with avocado and a squeeze of lemon. I will post the recipe for this very soon. This is my own recipe, and I need to change a couple of things, but they were very delicious! Perfect Autumn/Winter flavours, and can be served savoury or sweet.
Vegan, gluten free, sugar free, low fat.
I wouldn’t eat these all the time (at $2 a pop, you would run out of money very quick) but it is great to see more vegan/raw snacks becoming available. I always plan ahead with food, and something like this is simple to make, but if you are on the go these snacks are very very handy.
Avocado, tomato, banana, peanut butter. My four favourite foods that I love to mix and match.
Raw macaroons
I NEED TO MAKE THESE. I got a macaroon cook book from my mum for Christmas, and I have been too lazy to vegan-ise any of the recipes. I should really get around to doing this!

This morning was the first time that I have actually felt the morning chill during this new Autumn. I usually wake up and feel instantly excited about the morning smoothie I will make and drink, but today I wasn’t. I wanted something warm, like porridge with bananas and a big pot of tea. Then I looked in my pantry and saw an unopened bag of lentils and suddenly had the desire to make a delicious lentil soup.
I never really thought about the approaching Winter. Raw in Summer was so easy - tropical fruit salads all day, everyday. But in Winter, I think it will be a little more challenging for two reasons - 1) In Winter we want foods and drinks that keep us warm. 2) Our bodies use more fuel to keep us warm which means I am going to have to increase my intake even more, to ensure I stay healthy.
If anyone would like to shed some light on what they do in Winter, that would be fantastic, and greatly appreciated.
